What's the difference between milk and white chocolate?

Chocolate products are classified based on their particular blend of ingredients; milk chocolate products contain milk or milk powders in addition to the cocoa liquor, while dark chocolate contains a higher percentage of cocoa liquor in place of dairy products which contributes to its characteristic flavor. White chocolate contains no cocoa solids, instead containing a higher percentage of cocoa butter in addition to dairy products.
After blending, chocolate is further refined in two processes called conching​ and tempering​. Conching is an extended process where chocolate is heated through friction; the chocolate blend is continuously agitated and heated until the cocoa and sugar particles become undetectable to your tongue!
