The difference between semifreddo and gelato is clear: semifreddo is lighter and more airy, thanks to the addition of whipped cream. But what about semifreddo versus parfait? Some say semifreddo uses a meringue base while parfait starts with a pâte à bombe; others argue they’re the same dessert served at slightly different temperatures. Truth is—it doesn’t matter! Here’s our easy Chocolate and Cream Semifreddo recipe that guarantees a stunning result with minimal effort.
Ingredients
- 200 g Venchi dark chocolate
- 50 g icing sugar
- 4 eggs
- 200 ml fresh cream (for whipping)

Method
- Chop and melt Venchi dark chocolate in a bain-marie.
- Separate egg yolks from whites: whisk egg whites with icing sugar until stiff peaks form; add yolks to melted chocolate, one at a time, mixing well after each addition.

- Combine mixtures: fold egg whites into the chocolate-yolk mixture first, then gently fold in whipped cream using upward movements.
