- 500 g manitoba flour
- 7 g fresh brewer’s yeast
- 90 g sugar
- 4 eggs (2 whole + 2 yolks)
- 1 extra yolk (for brushing)
- 160 ml milk
- 80 g butter (softened)
How to Prepare Brioche with Gelato
- In a bowl, combine yeast, flour, milk at room temperature, softened butter, sugar, 2 whole eggs, and 1 yolk (reserve the other for brushing later).
- Mix the ingredients and then knead for about 15 minutes in a stand mixer (a few minutes longer by hand) until you get a smooth dough.
- Place the dough in a bowl, cover with plastic wrap, and let it rise for about 3 hours.
- Once risen, transfer the dough onto a floured surface and form balls: larger ones for the base and smaller ones for the tuppo.
