Pumpkin Chocolate Chip Muffins Recipe

Ingredients 

  • 2 eggs 

  • 1 cup brown sugar 

  • 1 cup pumpkin puree  

  • ¾ cup vegetable oil  

  • 1 ½ cups white flour  

  • 1 teaspoon baking soda  

  • ½ teaspoon vanilla extract  

  • 1 ½ teaspoons cinnamon  

  • 1 teaspoon ginger  

  • ¼ teaspoon salt  

  • 1 ½ cups Venchi dark chocolate 

 

Instructions 

Makes: 12 servings  

  1. Preheat your oven to 375F. You'll need a 12-muffin tin for this recipe. Grease with butter or cooking spray.  

  1. Put the eggs, brown sugar, pumpkin puree, and oil into a bowl. Whisk until well combined.  

  1. Stir in flour, baking soda, and vanilla. Add the spices and stir until combined. Be careful not to overmix.  

  1. Roughly chop the dark chocolate. Stir into the muffin batter.  

  1. Evenly pour the batter into the muffin tin. Then top each muffin with a sprinkle of the remaining chocolate.  

  1. It's ready for the oven. Bake for 15 minutes. Test with a wooden toothpick. It should come out clean.  

  1. Cool the muffins on a wire rack. Then serve and enjoy.

Gluten free pumpkin chocolate chip muffins 

If you're looking for a gluten-free treat, you can use our Venchi recipe with one easy tweak. All that's needed is to swap out the white flour in the recipe with gluten-free flour. Don’t forget that Venchi chocolate is gluten-free: you'll still create fluffy pumpkin chocolate chip muffins that are also gluten friendly. 

The pumpkin in this recipe is full of moisture and pairs perfectly with gluten-free flour, ensuring the muffins are not overly dense. To give them some crunch, you can add ½ cup of pecans to the batter.  

 

Vegan pumpkin chocolate chip muffins 

For those on a health kick, vegan pumpkin chocolate chip muffins are easy and delicious. Luckily, Venchi's dark chocolate is naturally vegan, so you can keep it in the recipe.  

 

The only change you'll have to make to the recipe is the eggs. To make the muffins vegan-friendly: 

  1. Swap out the 2 eggs for 2 chia eggs. You can make chia eggs by putting 1 tablespoon of white chia seeds in a bowl. 

  1. Stir in 1 tablespoon of warm water. 

  1. Let it sit for at least 20 minutes to let the chia seeds form a gel-like consistency similar to an egg. 

  1. Times the quantities by 2 to make enough for the pumpkin chocolate chip muffins.
